I’ve been watching way too much Cupcake Wars lately and have had the cupcake itch for days! What cupcakes to bake?! Was the question. I figured, my favorite cake (vanilla), favorite frosting (cream cheese) and favorite fruit (strawberries) would do the trick to kick all my cupcake cravings!
I started off with the strawberry filling, you will need:
• 2 cups of fresh diced strawberries
• 1/2 cup white sugar
• 2 tablespoons of corn starch
Over medium heat, toss in your diced strawberries into a saucepan. Stirring constantly, you’ll notice the strawberries getting softer and forming their own little sauce at the bottom of the pan. Then add the sugar and corn starch, this will immediately cause the sauce to thicken. Stir until everything is blended completely, remove from heat and place strawberry sauce into a heat safe bowl. Set aside to cool.
On to the vanilla cupcakes! You will need:
• 1 cup white sugar
• 1/2 cup butter, softened
• 2 eggs
• 1 tablespoon of vanilla extract
• 1 1/2 cups flour
• 1 3/4 teaspoons baking powder
• 1/2 cup milk
Preheat oven to 350F.
In a medium bowl, cream together the butter and sugar. Add one egg at a time to the mixture, then add the vanilla extract.
In a separate bowl, combine the flour and baking powder. Add the dry ingredients to the cream mixture. Beat ingredients together, then finally add the milk and mix until smooth.
Spoon your batter into cupcake liners, about 3/4 full. Bake about 20 minutes or until a toothpick comes out clean.
Allow cupcakes to cool, about 20-30 minutes.
Once the cupcakes are cool, it’s time to stuff them full of strawberry goodness! Cut X’s in the middle of each cupcake top and scoop the strawberry mixture into a piping tool. Gently place the end of the piping tool into the X of each cupcake and allow the strawberries to fill to the top of the cupcake. They will look like lovely little crime scenes!
It’s time to whip up the cream cheese frosting! You will need:
• 2 (8oz.) packages of cream cheese, softened
• 1/2 cup butter, softened
• 1 tsp. vanilla extract
• 3 cups confectioners sugar
Cream together the cream cheese and butter in a medium bowl until smooth, then mix in the vanilla extract. Slowly add the sugar into the mixture until everything is creamy and mixed together nicely.
Frost the cupcakes! Yum 🙂

They actually do freeze well! I had about half a dozen in the freezer for about 4 days, so I could bring some over to my family and they thought they were delicious. 🙂

My daughter loves strawberry cake, but I hate store bought cake mix and I’m not talented enough to figure it out on my own. These are perfect!
I have never managed to make successful frosting… I always thought I should add lemon juice… I’m guessing corn starch is what we call corn flour here in England?

That’s amazing! I always find making cupcakes from scratch come out dense. Any tips for making them fluffy?
Thank you so much! A couple things that I noticed help keep cupcakes/cakes on the fluffier side is creaming the butter and sugars very very well. Plus, using only egg whites(or even using 1 egg and the rest being egg whites). The more yolk you have going on, they tend to be more dense. If you use all egg whites, they will have a much lighter, fluffier texture. I hope this was helpful! 🙂

Do you have to scoop out any of the cupcake to get the strawberry filling to go in?
Not at all, just take a steak knife poke it through the center about 3/4 of the way to the bottom of the cupcake in an “x” shape. It leaves just enough space to stick a piping tool or a plastic bag with a hole in it. You slowly push the filling in until it pops up at the top. 🙂

Those look so delicious I want to eat them off the screen! Whether or not I can revive the existing strawberry plants in my garden or not (I have a plan for a super berry tower, but it’s going to take at least a year to get off the ground) I’m going to try these, and am super-excited that I now have a proper hand mixer so cakes and things will be easier 🙂 It was quite a production to have to cream butter and sugar in the blender up until a week or so ago 😉

Well, I could if I weren’t in the middle of one of those ‘bad days’ – there’s a grocery store only a few minutes away. The only things I’m missing are the cream cheese and strawberries. So I’ll put this aside for a day when I feel my energy crawling back into my bones and make them then. And I will bless you while the stand mixer sings its happy song!

We have a fancy cupcake shop here in Chicago, where the cupcake prices are the price of a small meal. These look as good as anything I have seen in the shop and I’ll bet they taste even better.
I hear ya! It’s the same with these cupcake shops in California. I walk out spending $10 and staring at 2 cupcakes… sometimes they’re great, sometimes they’re not.

How do they hold up if you make them ahead of time? I’m concerned the filling will make the whole cupcake soggy.
Well, I froze half a dozen for 4 days to drive some up to my family and they told me that they tasted great. The filling is actually pretty chunky and thick, rather than runny, so they held up pretty nicely. 🙂

I just used a good ol’ steak knife. Poke it in about 3/4 of the way to the bottom of the cupcake, take it out, tilt it, do the same thing… there you have it. 😀

The thing I love most about cupcakes is that they take me back to my childhood when my mum would let us frost our own in any design we wanted -granted they didn’t look as BEAUTIFUL as yours do in this blog, but we were sooooo proud of our little masterpieces.

this looks SO GOOD! I don’t like cream cheese frosting though..what other frosting would you recommend?
Thank you so much! I’d think most any frosting would go well with white cake and strawberries. Vanilla, whipped cream, a blogger mentioned chocolate to give it the “strawberries dipped in chocolate” feel. Even other fruit buttercreams would be great, blueberry, banana, etc. What sort of frosting do you like?

(Thought I would mention though, you didn’t put adding the milk in the directions, it took me a minute to figure out why my batter was so dry. Didn’t hurt anything that I added after the flour, but thought I should mention.)
Ah ha! I just realized what I did. I put the milk in the ingredients, but said “add in the mix to the mixture”… when I meant “add in the milk to the mixture.” Good grief.

We received a kitchenaid mixer as a wedding gift last summer. I was baking up such a storm that I had to put a temporary ban on all cupcake making (for the sake of my waistband). I may just have to lift the ban to make these yummy treats. Vive le cake! 😉

So I just made these! Big mistake… My husband is gone and I have a 10 month old sooo I am eating them like crazy! They are sooo good!! However, it made a lot of frosting I just froze the remainder 🙂

When this happens to me, I usually add a bit more powdered sugar and beat the frosting on a very high setting until it firms up. I hope this is helpful and good luck! 🙂

I don’t see why not. The filling is basically strawberry jam, so it should be a similar substitute.
