Strawberry Filled Cupcakes with Cream Cheese Frosting

I’ve been watching way too much Cupcake Wars lately and have had the cupcake itch for days! What cupcakes to bake?! Was the question. I figured, my favorite cake (vanilla), favorite frosting (cream cheese) and favorite fruit (strawberries) would do the trick to kick all my cupcake cravings!
Even more yum on the inside
I started off with the strawberry filling, you will need:

• 2 cups of fresh diced strawberries
• 1/2 cup white sugar
• 2 tablespoons of corn starch

Over medium heat, toss in your diced strawberries into a saucepan. Stirring constantly, you’ll notice the strawberries getting softer and forming their own little sauce at the bottom of the pan. Then add the sugar and corn starch, this will immediately cause the sauce to thicken. Stir until everything is blended completely, remove from heat and place strawberry sauce into a heat safe bowl. Set aside to cool.

On to the vanilla cupcakes! You will need:

• 1 cup white sugar
• 1/2 cup butter, softened
• 2 eggs
• 1 tablespoon of vanilla extract
• 1 1/2 cups flour
• 1 3/4 teaspoons baking powder
• 1/2 cup milk

Preheat oven to 350F.
In a medium bowl, cream together the butter and sugar. Add one egg at a time to the mixture, then add the vanilla extract.
In a separate bowl, combine the flour and baking powder. Add the dry ingredients to the cream mixture. Beat ingredients together, then finally add the milk and mix until smooth.
Batter is complete
Spoon your batter into cupcake liners, about 3/4 full. Bake about 20 minutes or until a toothpick comes out clean.
Out of the oven
Allow cupcakes to cool, about 20-30 minutes.
Once the cupcakes are cool, it’s time to stuff them full of strawberry goodness! Cut X’s in the middle of each cupcake top and scoop the strawberry mixture into a piping tool. Gently place the end of the piping tool into the X of each cupcake and allow the strawberries to fill to the top of the cupcake. They will look like lovely little crime scenes!
Murder scene/strawberry filling
It’s time to whip up the cream cheese frosting! You will need:

• 2 (8oz.) packages of cream cheese, softened
• 1/2 cup butter, softened
• 1 tsp. vanilla extract
• 3 cups confectioners sugar

Cream together the cream cheese and butter in a medium bowl until smooth, then mix in the vanilla extract. Slowly add the sugar into the mixture until everything is creamy and mixed together nicely.
Mixed up cream cheese
Frost the cupcakes! Yum 🙂
Mmm cream cheese...

I ate enough of these to feel guilty… I did freeze some for my family though and they enjoyed them! Thank you so much for stopping by and I will definitely be checking out your blog. 🙂

    • cobo0521 says:

Thank you very much! I tend to throw a bunch of stuff together and hope for the best, sometimes I get nice results! Please let me know if you give them a go. 😀

I just posted a blog yesterday about Chocolate covered strawberries being one of my most favorite things.. and these look yummy.. maybe I’ll try a twist and put some chocolate into the frosting and try that.. 🙂

      • toxicraptor says:

It’s been a while but I fially got a chance to make the cupcakes! They were fantastic with the Mango and chocolate XD They were a hit with everyone! Thanks for the great recipe~

  3. Chrystal says:

First, congrats on being Freshly Pressed! Second, these look really yummy. When I first started reading, I assumed you put a piece of strawberry in the raw batter before putting them in the oven. I wonder how that would turn out?

    • cobo0521 says:

Thank you! I was very pleasantly surprised on being Freshly Pressed. 😀
I have no idea how it would turn out, you’d think the strawberry wouldn’t stand up well in a liquid batter. I’m willing to experiment though!

  4. Adrian says:

OMG, those cupcakes look so delicious. It seems like they’re really easy to make too. I love the photo’s as well. Great job.

  5. Sibella says:

Lovely cupcakes! 🙂 I love the idea of putting fresh strawberries in the baked cupcakes, instead of putting them in the batter. Very nice photos too!

  6. Marti Parham says:

This looks sooooo tasty! I plan on reposting this recipe on my blog Marti Ink this Sunday. It will be included in The Week’s Head-turning Headlines under “creativity.” Congrats on getting pressed by the way :-).

  7. deeslawson says:

Oh My Yummi Goodness!!! I just went grocery shopping, and just happened to buy strawberries and cream cheese…it’s like these cupcakes were destined to be in my belly! LOL

  8. Lois says:

I have never managed to make successful frosting… I always thought I should add lemon juice… I’m guessing corn starch is what we call corn flour here in England?
    Sounds wonderful!! Mmmmmm!

  9. angelique523 says:

I love frosting so much. There is something even artistic about the way you photographed it in the pan. Please, pass that tin over here. Thanks!

  10. ohnana says:

That looks so delicious! I am a dessert person. Can I just ask if this is possible using an oven toaster? Good job! And congrats on freshly pressed! 🙂

      • ohnana says:

I’ve tried baking in oven toaster but never from scratch. I buy some cake mix that are labeled “for oven toaster”. It’s okay, not that bad. But I will try this this weekend. Thanks for the inspiration!
        🙂

That’s amazing! I always find making cupcakes from scratch come out dense. Any tips for making them fluffy?

    • cobo0521 says:

Thank you so much! A couple things that I noticed help keep cupcakes/cakes on the fluffier side is creaming the butter and sugars very very well. Plus, using only egg whites(or even using 1 egg and the rest being egg whites). The more yolk you have going on, they tend to be more dense. If you use all egg whites, they will have a much lighter, fluffier texture. I hope this was helpful! 🙂

    • cobo0521 says:

Not at all, just take a steak knife poke it through the center about 3/4 of the way to the bottom of the cupcake in an “x” shape. It leaves just enough space to stick a piping tool or a plastic bag with a hole in it. You slowly push the filling in until it pops up at the top. 🙂
      I hope this was helpful!

  12. lijiujiu says:

Wow, I believe it must been very delicious. Admire you skill so much.
    Congratulations on being Freshly Pressed!

  14. Brenda K says:

Those look so delicious I want to eat them off the screen! Whether or not I can revive the existing strawberry plants in my garden or not (I have a plan for a super berry tower, but it’s going to take at least a year to get off the ground) I’m going to try these, and am super-excited that I now have a proper hand mixer so cakes and things will be easier 🙂 It was quite a production to have to cream butter and sugar in the blender up until a week or so ago 😉

    Congrats on getting freshly pressed!

Happy Friday! I just had to share these lovely cupcakes. Considering I baked chocolate chip cookie brownies already tonite… Looks like I need a sugar fix. Oh well, cupcakes and brownies will give me more energy for thrift shopping Saturday. Cheers!

  16. Scott says:

I know almost nothing about cooking, but that is one of the most delicious-looking desserts I’ve ever seen. I wish I could reach into my PC monitor and grab that cupcake!

    • cobo0521 says:

I’m tellin’ you, they’re easier than they look. I was pretty intimidated by filling cupcakes, but once I did it, all I kept thinking was “well, that was easy!” Give them a shot or force the baker in your family to make them for you! 😛

  17. twinecities says:

These look amazing. I’m considering ripping you off slightly and doing the same sort of thing with raspberries… Berries and sponge is a magical combination.

    Rachel.

    • cobo0521 says:

By all means! I just wanted to share a recipe, use the instructions you like and modify the others. Your version sounds awesome, I’d love to hear about the outcome! 🙂

  18. thefrancofly says:

Thanks for the elegant idea! It’s strawberry season in Paris, too. And I always get talked into buying a kilo of strawberries at the market every time I go! Keep the strawberry recipes a’coming.

My little niece just went to Georgetown Cupcakes in New York for her 10th birthday! She was so pleased to have her picture taken with Katherine and Sophie (of DC Cupcakes fame on TLC). These cupcakes look just as good as the yummy ones my niece ate on her birthday trip (she went back three times over the course of two days. ha!). Congrats on the Freshly Pressed. 🙂

  21. katemai says:

Such a cute header for your blog! And congrats for being so freshly pressed! Some of us has over 100 posts and no such honors! The cupcakes look amazing, and vanilla is my favorite flavor, too. Strawberries are just coming into season here in France, so I will be thinking about these little babies!

  22. mackerelskies says:

Things I love about this post:

    1. Cupcakes. Yum!
    2. Cupcakes that use scratch incredients, not “make some cupcakes from this box mix and then add things.” Yum!
    3. “They will look like lovely little crime scenes!”

Hell with it. I’m in love with this post. Except for the bit where now I want cupcakes.

      • mackerelskies says:

Well, I could if I weren’t in the middle of one of those ‘bad days’ – there’s a grocery store only a few minutes away. The only things I’m missing are the cream cheese and strawberries. So I’ll put this aside for a day when I feel my energy crawling back into my bones and make them then. And I will bless you while the stand mixer sings its happy song!

  23. indigofletcher says:

This looks like such a great recipe! I can’t wait to make them now! My school has a Cupcake Wars club so I think its really cool how a TV Show about cupcakes can inspire people to do so many cool things!

  24. newsy1 says:

We have a fancy cupcake shop here in Chicago, where the cupcake prices are the price of a small meal. These look as good as anything I have seen in the shop and I’ll bet they taste even better.

    • cobo0521 says:

I hear ya! It’s the same with these cupcake shops in California. I walk out spending $10 and staring at 2 cupcakes… sometimes they’re great, sometimes they’re not.
Thank you very much stopping by and I appreciate your comment 🙂

  25. marcys says:

I have been out of corn starch for weeks, and cannot find it in any of the places I shop! But this recipe will motivate me to, duh, ASK someone wtf it is!

    • cobo0521 says:

Well, I froze half a dozen for 4 days to drive some up to my family and they told me that they tasted great. The filling is actually pretty chunky and thick, rather than runny, so they held up pretty nicely. 🙂
      I hope this was helpful!

  26. leimangubat says:

These cupcakes look so delicious! I would love to make some of my own but I have one silly question: how did you make those X’s on your cupcakes? What fancy piece of kitchen equipment did you use?

    • cobo0521 says:

I just used a good ol’ steak knife. Poke it in about 3/4 of the way to the bottom of the cupcake, take it out, tilt it, do the same thing… there you have it. 😀
      Thank you so much!

  27. SimplySage says:

Luscious presentation. Mmmm….inspired to bake these—a different twist on strawberry shortcake. Love the idea of “vanilla” cupcakes, not yellow or white.

  28. The Waiting says:

These look amazing and I am definately going to make them. I am also going to pass your blog along to a friend of mine who is about to launch her own food and recipe blog. Your are certainly doing everything right on your site : D

Congrats on Freshly Pressed! Enjoy the ride!

    • cobo0521 says:

I really appreciate your comment and I’m glad you enjoyed the post! 😀
Your friend is going to have so much fun with her blog! It’s so addicting… I’d love a link to her site when she’s launched!

The thing I love most about cupcakes is that they take me back to my childhood when my mum would let us frost our own in any design we wanted -granted they didn’t look as BEAUTIFUL as yours do in this blog, but we were sooooo proud of our little masterpieces.
Thanks for taking me back x

    • cobo0521 says:

Your comment really made my day, I’m so glad my little cupcakes brought back such a great memory. 🙂
I hope you’re having a great weekend and thank you so much for stopping by!

    • cobo0521 says:

Thank you so much! I’d think most any frosting would go well with white cake and strawberries. Vanilla, whipped cream, a blogger mentioned chocolate to give it the “strawberries dipped in chocolate” feel. Even other fruit buttercreams would be great, blueberry, banana, etc. What sort of frosting do you like?

  35. Kate Blair says:

I made these tonight and they turned out terrific. Thank you for the great recipe!
(Thought I would mention though, you didn’t put adding the milk in the directions, it took me a minute to figure out why my batter was so dry. Didn’t hurt anything that I added after the flour, but thought I should mention.)

    • cobo0521 says:

Ah ha! I just realized what I did. I put the milk in the ingredients, but said “add in the mix to the mixture”… when I meant “add in the milk to the mixture.” Good grief.
Thanks for catching that and I’m glad they turned out well for you! 😀

    • cobo0521 says:

You’re tellin’ me… I’ve vowed to cut back on sugars and carbs, yet I start a baking blog *face palm*. Good thing my boyfriend, family and friends take most of them away from me! 😀

I was glad to see your from-scratch cake recipe. I’d have been disappointed if you used a box mix. 🙂

These look divine. I’ll definitely be trying this recipe out very soon. I have a 14 year old daughter who would survive if the only foods available were apples, strawberries, raw spinach, ranch dressing, extra sharp cheddar cheese, and McChicken sandwiches.

  39. truthandcake says:

We received a kitchenaid mixer as a wedding gift last summer. I was baking up such a storm that I had to put a temporary ban on all cupcake making (for the sake of my waistband). I may just have to lift the ban to make these yummy treats. Vive le cake! 😉

  40. Laura says:

Chocolate is fine, but vanilla is my favorite flavor of cupcake (and ice cream!) too! These look wonderful. Will make them soon. Thank you for sharing.

  41. Cherszy says:

Yum, yum, and yum! Strawberry-filled cupcakes – that’s definitely some treat I want to try making (or just eat if I’m lazy). Maybe, I’ll add some chocolate syrup to it too. 🙂

I love the photos by the way! Great shots!

  42. Jacki says:

These looks so amazing, I can’t wait to try them out! Cupcake Wars gives me that same desire to bake up a storm (of cupcakes).

  43. haphazardlibrarian says:

Definitely trying these! If they turn out like yours, they’ll look lovely on the cupcake stand I just bought.

    p.s. Love the photography! 🙂

  47. Megan says:

So I just made these! Big mistake… My husband is gone and I have a 10 month old sooo I am eating them like crazy! They are sooo good!! However, it made a lot of frosting I just froze the remainder 🙂

    • cobo0521 says:

Uh oh, baking with only yourself available to eat them… you asked for it! 😛
I always seem to make too much frosting, I suppose I figured it’s better to have too much than not enough. haha.
I’m so glad that you made them and they turned out so well!

  48. sweetrocky1999 says:

I love the look of these, i’m gonna try them. by the way can you post a Lemon Meringue Pie Recipe???

  49. Greta Baker says:

I just noticed the cupcake ingredients has milk listed, but no milk in the directions. Do I mix that in with the butter/sugar?

  50. Alyna says:

These look so yummy so I baked them and I’m on the frosting part but my frosting is super soggy and won’t get firm? Any suggestions????

    • cobo0521 says:

When this happens to me, I usually add a bit more powdered sugar and beat the frosting on a very high setting until it firms up. I hope this is helpful and good luck! 🙂

  51. Lori says:

I made these last year for Memorial day and they were a hit. I am making them right now for Mother’s Day tomorrow. I will say we had leftover frosting last year and we ate it on bagels! YUM!!!!!! Thanks for sharing your recipe.

  52. Jacky says:

Made these for a nursery fair and they were a sellout! Yummy, yummy, yummy! Still getting rave reviews and requests for more. 😉

  53. Rachel says:

These look amazing!! Could you tell me how many cupcakes this recipe makes? I need to make 25 cupcakes for a family function. This will be my first time making a cupcake with filling in them so im excited to try these. Please let me know, thank you!!

    • Rachel says:

I’m looking at above comments and see that the recipe makes about 20 cupcakes which is good, I need to make 25 but I will figure it out.

  54. Vilde says:

How many cupcakes is the recipe for? Do you think I could use the strawberry filling into a chocolate cupcake, or is it too sweet?

    • cobo0521 says:

This recipe made about 20 cupcakes. I believe a chocolate cupcake with strawberry filling would be incredible! Like a chocolate covered strawberry. Yum!
