Trail Mix Cookies

I had the baking urge, but wasn’t sure what to bake. I wanted to bake something new, especially something I knew the live-in boyfriend would enjoy. After staring blankly into the cupboard for ideas, I saw the boyfriend’s favorite bag of trail mix and thought trail mix cookies would be easy enough! I got down to baking business and was pleasantly surprised with the yummy, nutty result.
Trail Mix Cookies
The Ingredients:
• 3 cups flour
• 1 cup white bakers sugar
• 1 cup packed brown sugar
• 1/2 tsp baking powder
• 1/2 tsp baking soda
• 1/4 tsp salt
• 1 tbsp vanilla extract
• 1 cup butter (browned)
• 2 eggs
• 2 cups of your favorite trail mix
Preheat the oven to 350F.
To brown the butter. This is a great way to have your butter melted, but with a great nutty aroma. Cut up your butter into pieces and toss them into a sauce or saute pan over medium heat. You’re going to be stirring the butter constantly. While stirring, the butter will start to form bubbles and little brown bits will start floating around. Once you notice the nutty scent and a nice nut brown color, pour your butter into a heat resistant bowl to cool and set aside(I’ve actually put the butter into a plastic bowl before.. yeah, don’t do this). The whole browning process takes about 5 minutes.
Sift together your flour, baking powder, baking soda and salt into a large bowl. Set Aside.
In a medium bowl, cream together the sugars and the butter. Mix in the vanilla and then the eggs, one at a time.
Creaming Sugars & Butter Both Mixtures
Pour your creamed ingredients into the large bowl of your dry ingredients. Combine mixtures with a wooden spoon, into a nice dough. Stir in the trail mix thoroughly.

Since the dough is a thicker consistency, I just used my hands to place the cookies onto a greased cookie sheet. I rolled them into balls, then pressed down to flatten them a bit onto the cookie sheet.
They're just so colorful..
Place the cookie sheet into the oven for 10-12 minutes. Allow the cookies to cool and enjoy!
